Sichuan Style Udon Noodles with Chicken Breast

Ingredients:
– 250g udon noodles


– 1 piece chicken breast


– 15ml vinegar


– 15ml chili oil


– 1/2 teaspoon + 1/4 teaspoon salt


– 1/4 teaspoon white pepper powder


– 1 teaspoon sesame oil


– 1 teaspoon toasted sesame seeds



Instructions:


Cook udon noodles according to package directions, drain, and set aside.


Boil or pan-sear chicken breast until fully cooked, then shred or slice thinly.


In a bowl, combine vinegar, chili oil, salt, white pepper, and sesame oil to make a dressing.


Toss the noodles with the dressing and top with shredded chicken.


Garnish with toasted sesame seeds before serving.

Sesame paste, diluted to 60ML


Cucumber, as needed


Red bell pepper, as needed


Chicken breast, 1 piece


Scallions, ginger, cooking wine, as needed


Noodles, as needed


Cooking oil, as needed



Instructions:


1. Place chicken breast in boiling water with scallions, ginger, and cooking wine, and cook until done.


2. Shred the cooked chicken breast along its fibers and set aside.


3. Julienne the cucumber and red bell pepper.


4. Cook the noodles in boiling water until done.


5. Rinse the cooked noodles under cold water.


6. Drain the noodles, then toss with a little cooking oil to prevent sticking.


7. Prepare two portions of sauce by mixing the remaining ingredients.
Finally, mix all the ingredients together with the noodles until well combined.
