All-Purpose Flour: 2 cups
Water: Approximately 150ml
Sesame oil: appropriate amount
Sesame seeds: appropriate amount 1. Mix 2 cups of all-purpose flour with approximately 150ml of water and 1 teaspoon of salt. If the dough is too dry, add a little more water gradually. Knead the dough thoroughly to make it elastic, then let it rest for 30 minutes. 2. Roll the rested dough into a sheet about 0.6-1 cm thick, then cut it into strips of the same width (0.6-1 cm). 3. Bring a pot of water to a boil. Before adding the cut noodles to the boiling water, hold both ends of each strip and shake them vigorously up and down to stretch them longer and thinner. Then cook the noodles in the boiling water until just done. 4. In another pot, heat vegetable oil until hot, then let it cool. Once the noodles are cooked, drain them thoroughly, let them cool, and toss them in the cooled vegetable oil to prevent sticking. 5. Place the noodles in a bowl. Mix together compound soy sauce, chili oil, minced garlic, sesame paste, ground Sichuan pepper, sesame oil, and sesame seeds. Pour this mixture over the noodles, toss well, and serve.
