1. Prepare the raw ingredients.
2. Add peanut oil to the pot and heat to 60% hot. Use a bit more oil.
3. Add the wontons and shake the pot to ensure even heating.
4. Fry until both sides turn golden brown.
5. Transfer to a plate and set aside.
6. Leave a small amount of base oil in the pot and sauté the minced scallion, ginger, and garlic until fragrant.
7. Add an appropriate amount of oyster sauce and light soy sauce.
8. Add a small amount of water starch and bring to a boil. Do not add too much starch; a little is sufficient.
9. The fragrant Xiangling Chaoshao (Sichuan-style fried wontons) are ready to be served.
10. Pour the sauce over the fried wontons.
