1. Prepare the ingredients: peel and devein the prawns, leaving the tails on; clean and slice the squid into rings; slice the fish cake; cut the Chinese flowering cabbage into sections; slice the chicken or pork; slice the carrot.


2. Mix cornstarch with water until smooth, and beat the eggs in a separate bowl.


3. Bring a pot of water or broth to a boil.


4. Add the chicken and carrot.


5. Then add the prawns, squid, and fish cake. After the soup returns to a boil, season with salt, light soy sauce, and white pepper. Add dark soy sauce for color.


6. Pour in the cornstarch mixture to thicken the soup.


7. Slowly pour in the beaten egg while stirring continuously.


8. Finally, add the Chinese flowering cabbage. The soup is now ready.


9. Heat a wok with one tablespoon of oil, add the minced garlic, and stir-fry until fragrant.
10. Add the rice noodles, dark soy sauce, and light soy sauce together, stir-fry over the highest heat to ensure the noodles are flavorful.


11. Serve a small plate of the stir-fried rice noodles.


12. Pour the prepared sauce over the noodles, presenting the slippery and fresh flavored Shahe rice noodles.
