Egg-Fried Dousi (Hubei Snack) Recipe

Cut the purchased Dousi into strips of your preferred width.
Since wet Dousi tends to stick together, be sure to separate each strip by hand.


Prepare some green garlic and a small amount of red bell pepper.


Add an appropriate amount of salt to the eggs, then beat them until well mixed.


Heat the wok, add oil, and pour in the beaten eggs.


Stir rapidly with chopsticks to scramble the eggs.


Remove the scrambled eggs and set them aside in a container.


Add a little more oil to the wok.


Stir-fry the green garlic and red bell pepper until they slightly change color.


Add the Dousi strips and stir-fry briefly.


Pour in an appropriate amount of light soy sauce, then add salt, pepper, and other seasonings, stirring to combine.


Add the previously scrambled eggs back into the wok.


Stir-fry everything together briefly.


This completes the delicious egg-fried Dousi.
