First, dry-fry the yacai (Sichuan preserved vegetable) in a wok until about 60-70% of its moisture evaporates, then set aside. (This ingredient is commonly available in supermarkets. If using raw yacai, rinse it twice, squeeze out excess water, and chop finely.) The prepared yacai is set aside for later use. Heat oil in a wok, add ground pork, and stir-fry. Once the meat has released all its moisture and the oil becomes clear, add the previously prepared yacai. Continue stir-frying until all moisture evaporates and the oil turns translucent. Season with an appropriate amount of salt and MSG. (Ensure all moisture is fully evaporated; the oil should appear clear as shown in the image.) Add chopped scallions. Stir-fry briefly until the scallions wilt, then remove from heat. The meat filling is now ready. If not used immediately, it can serve as a topping for noodles or be mixed into rice for added flavor. Let the filling cool completely before wrapping to prevent oil leakage and burns.
11. Knead the two types of flour together according to the specified ratio. Ensure to knead thoroughly several times; this will make the dough skin more elastic and chewy. No resting time is required. Once kneaded, proceed immediately to wrapping. Wrap the filling similarly to making tangyuan, but make the dumplings slightly larger than tangyuan. 12. Place the meat filling in the center of the dough skin. 13. Gather the edges and seal, then shape into an oval. Place it on a yerba leaf. 14. Steam in a steamer for 12 minutes. Note: During steaming, lift the lid every three minutes to release steam. This step ensures the steamed dumplings appear more appealing and taste better. Do not forget this crucial tip! 15. After steaming, my mother tasted them and commented that aside from the slightly irregular shape, the flavor was satisfactory. Paired with a bowl of sweet pumpkin porridge, the dinner was complete. With each bite, the fragrant leaf aroma combined with the rich meat filling delivered an exceptionally delightful taste!
